We made veggie burgers tonight! We got the recipe from www.buffchickpea.com, but cut the recipe in half and added wheat germ.

Roasted Pepper Veggie Burger
1(15-oz) cans chickpeas, drained and rinsed
2 large eggs
1 red bell pepper
1 jalapeno peppers
1/4 teaspoon fine-grain sea salt
1 teaspoon of dried cilantro
1/2 onion, chopped
Zest of one lemon
1 cup alfalfa sprouts
1/4 cup whole-grain bread crumbs
1/4 cup wheat germ
1 tablespoon extra-virgin olive oil

Preheat oven broiler

1. De-seed and cut peppers in half. Place on baking sheet to broil for 3 minutes. Immediately place in paper bag. Wait 5 minutes and the skins peel away.

2. Drain and rinse chickpeas and place in food processor. Add eggs, cilantro, salt and chopped roasted peppers.

3. Puree to hummus consistency and add alfalpha sprouts. Pulse a few times.

4. Transfer mixture to bowl and add chopped onion, lemon zest, wheat germ (optional) and toasted bread crumbs. Stir to combine. Allow the bread to soak up juices.

5. Heat skillet to medium heat and add the olive oil. Cook 8 minutes on each side for nicely browned patties.
