root beer

Heather and I made our long talked about root beer the other day. Its good, but has some room for improvement. We got the Rainbow Soda Root Beer concentrate from Austin Home Brew. We mixed everything in a 5 gallon keg, and forced carbonated it at the end.

  • 2.5 oz of concentrate.
  • 4 cups of cane sugar
  • 4 oz of malto-dextrine
  • 5 gallons of warm water

Fill keg with water. Shake concentrate well, then pour into keg. Add sugar and malto-dextrine. Shake keg well. Carbonate to 30 psi and refrigerate.

We originally just had 4 gallons of water, but it seemed too “root beer” or “too syrupy” so we added another gallon to 5 gallons total. After adding the water it tasted too watery so we added another .5 oz of concentrate to bring it to 2.5 oz total. After cooling and carbonating the beer, I would add more sugar next time. Its good, not as sweet as your commercial rootbeers, but good.
